Broccoli Cheddar Chicken Soup

I still need to go through Food Addiction detox ( wp.me/1N36Q ). All those sugary, fatty foods still call to me, despite my best efforts to work through Dr. Peeke’s “Three M” model.

Take Friday night, for example. It happened to be a cookie baking weekend ( wp.me/p1N36Q-1K ). I know, a bit sooner than the 14th, but I was trying to kill two birds with one stone – cookies for my husband AND for his mom for Mother’s Day today. After last month’s fiasco ( wp.me/p1N36Q-57 ), I promised myself I would make the Wheat Belly cookie recipe this time around. However, with an opportunity to get one of our cookie mixes out of the house, I broke my promise. BUT I did not binge on cookies.

Only because I had binged earlier in the day on graham crackers.

So I figured it’s time to take a look at Dr. Peeke and her food plan again. None of the recipes she suggests for each of the stages of her Detox and Recovery Plan really looked all that exciting to me. But I did find a recipe I happened to have all the ingredients for in her “Stage 2 Lunches” section – Broccoli Cheddar Soup with Chicken. So here’s what you need:

2 teaspoons olive oil
2 cloves garlic, minced
1 small onion, chopped
1 1/2 quarts chicken stock*
6 cups broccoli florets – I used frozen broccoli here
1/2 cup reduced fat sharp Cheddar Cheese
2 cups cooked chicken – Recruited my husband to grill up a family pack of chicken thighs, and I used a few for the soup
1/4 tsp salt – I omitted
1/4 tsp ground black pepper
Dash of ground nutmeg

*She provides a recipe for making your own. I substituted Knorr’s Vegetable stock because I had it on hand and I’m lazy.

Heat the oil in a large pot over medium high heat. Add the garlic and onion. Cook, stirring frequently, for 4 to 5 minutes, or until soft. Add the stock and bring to a boil. Add the broccoli and cover the pot. Reduce the heat to medium and simmer for 5 to 7 minutes. With a stick blender or regular blender, puree the soup.

Side story – stick blenders make me nervous. I ruined a pot with one last year – scratches all over the place. I have new cookware from my wedding last year that I really want to keep like new. So I did use the stick blender, but was super careful to not let it touch the base or the sides of the pot.



It worked, but I probably have a few more broccoli chunks than I should. Still, that is some GREEN soup.

When you feel you have a reasonable consistency for your soup without ruining your pot, stir in the cheese. Then add your chicken, salt, pepper, and nutmeg. Makes 4 servings.

So this was pretty flavorful and quite delicious. I’m not sure what kind of trouble I’m in for using a “Stage 2″ recipe when I’m not even through “Stage 1 Detox,” but I may have to go back through these recipes and give them a shot after all.
