Having just finished a wonderful Mother's Day breakfast of 1 sunny side up egg w/ a small turkey sausage patty and half a slice of wheat toast, I wonder why do we eat eggs w/ bacon or sausage anyway. Not that I don't love bacon and eggs, but isn't that eating double proteins in one meal. Just wondering. I imagine that in settler times, one had to eat what was available and almost everyone had chickens and hogs and/or a cow. I would imagine that biscuits were fairly common as a side and so now we have some variation of that combo as a morning meal. We're supposed to be smarter now, aren't we? protein + carb + fruit/vegetable? I'm not going to complain though, as my breakfast was lovingly prepared by my spouse while I was getting to sleep in. I am thinking that an egg w/ toast might be made healthier by adding a side of greens, peppers, any morning friendly vegetable, or any fruit for that matter. I'm going to have to retrain my cook though ;-). He's a good student and catches on quickly, so check back in a few Sunday's...
