I fixed some quinoa this morning for the first time. I was surprised as what it looked like once it was cooked. I mixed in some applesauce and cinnamon and nutmeg - it did not really taste that good. I added too much of those ingredients and they drowned out the taste of the quinoa. I'll know better the next time.
I also had half a grapefruit which just tasted divine. It's amazing how sweet fruits taste once you stop eating processed sugars.
I did a lot of reading yesterday and it's going to take time for me to rethink the foods we eat. I've got lots of dairy in the house (cheese, cottage cheese, yogurt) and I hate to just throw those away. My husband will eat the regular cheese, but he's not a fan of cottage cheese or yogurt. He also likes his milk - I've never been a big milk drinker - so giving that up is not a problem.
I made a loaf of bread in the bread machine this morning and I decided to try using flax seed meal as an egg substitute just to see what would happen. We haven't tasted it yet, but I am anxious to see what the texture and taste will be like compared to what it usually is. The next thing I'll try to do is cut out the oil, but I figured I'd better just do one thing at a time.
