Becoming a Vegetarian

I'm thinking about it. I have a friend at work who is a vegan. I don't know that I can go that far. I'll start slowly - by having several meatless days and just increasing whole grains and fruits & veggies in my diet. At the same time I'll slowly decrease dairy (including cheese), eggs, and meat. (I have found a great substitute for eggs in recipes - flax seed meal - it works great!)

I'm going to check out the site for more info (love all the articles and info on this site) and turn on my meal plan as a vegetarian just to get some ideas on what to fix.

    I love all the veggies DS9KIE commented with! Eating more fresh food is always a good thing. If you're able to feed yourself well with entirely plant foods, go for it. If you're struggling to make it all work, don't be afraid to incorporate some vegetarian favorites in your life as you transition.

    You can use your friend the daily report to scrutinize meals that worked out really well for you. When I found a lunch combo that was great at making everything in my day work, I made it into a group. Oh, and my favorite "magic" vegan ingredient is capers. Sprinkle those salty little babies over any kind of steamed veggies for instant yum! The Veganomicon is a cookbook with lots of great ideas, you can find many of their recipes online at the Post Punk Kitchen.

    Having been up and down the pescetarian (vegetarian + fish) to vegan spectrum for over 20 years, I've found the term "plant-based" useful to stop all the verbal poking you get from coworkers and friends who find the V words to be some sort of hot button.
