I'm thinking about it. I have a friend at work who is a vegan. I don't know that I can go that far. I'll start slowly - by having several meatless days and just increasing whole grains and fruits & veggies in my diet. At the same time I'll slowly decrease dairy (including cheese), eggs, and meat. (I have found a great substitute for eggs in recipes - flax seed meal - it works great!)
I'm going to check out the site for more info (love all the articles and info on this site) and turn on my meal plan as a vegetarian just to get some ideas on what to fix.
