Haha! I CAN improvise and still eat clean!
Last night's meal plan called for Asparagus & Avocado sushi. A quick stop at the other local grocery store procured me some avocado, and i subbed cider vinegar for the rice vinegar the recipe called for.
I skipped the steamed cod and used the wild salmon filets I had in the freezer. I found a clean dill and balsamic marinade for them online and it was Gooooooood!
Half way thru bbqi g them my hubby informed me my brother in law wanted to stay for dinner. Aaaaargh! I only had three pieces of Salmon!
So i cut em in half, threw some shrimp in a pan with stir fry veggies and nuked a couple of packages of edamame for nibbles.
And cuz I'm a culinary nerd, i looked up how to make Tamago(egg) sushi and did cucumber rolls to round out the options.
It was a lovely feast!
Only trouble was, there were no leftover for my lunch today. Ahahahaha;D
