SPAGETTI SQUASH AU GRATIN

Spaghetti Squash Au Gratin
Serves 6

1 medium spaghetti squash
2 tablespoons butter
1 small yellow onion, cut in half and very thinly sliced
teaspoon red pepper flakes, or more if you like it spicy
1 teaspoon fresh thyme
cup sour cream
cup shredded cheddar cheese

Cut the spaghetti squash in half and remove the seeds. Place in a covered dish with a inch of water and microwave for 10 -12 minutes. In a medium sized skillet over medium heat, add the butter, onions, red pepper and thyme and cook until the onions are slightly brown in color. Salt and pepper to taste.

Using a fork, scrape the insides of the squash and transfer to a small bowl. Combine the squash, onions, sour cream and half the cheese together and mix well. Transfer the mixture to a buttered baking dish and top with remaining cheese.

Place into a 375 for 15 20 minutes until golden brown on top.

    i love this spaghetti squash...I add it ti soups and stews...
I nuke mine whole.....I wash it real good poke the skin with lots of fork holes, then wrap in clear plastic...I nuke for 3 minutes in high, let it rest for 3 minutes, then nuke it again...I do this 3 or 4 times then let it set for about 15-20 minutes, the flavor seems better to me than when I steamed it.....once it is cool enough to handle cut in half remove the seeds then scrap and take out the squash, it's good cold in salad as well

    We love spaghetti squash. It also works well as a spaghetti substitute in a traditional spaghetti dinner. Thanks. I am going to make this a soon as I am allowed to take this blasted sling off my left arm.
