This was a quick, easy dinner but as breakfast it would be divine as well
I love potatoes and this is a great lower fat way to fix them.
I typed out the whole recipe and it vanished. So as much as I love potatoes I hate typing!
The recipe is From Betty Crocker-Herbed potato egg scramble.
All you need is a red potato, 6 eggs,herbs,water,oil,roasted red peppers,parmesan cheese
Sautee the tater in oil, 2 minutes, add 3 tbsp water,cover and cook 5-7 min til tender
Mix egg with herds and pepper,pour over potato
Cook a few minutes, sprinkle with cheese-I couldn't taste the cheese so I'd leave it off or use a sharp cheddar.

Defrosted strawberry cupcakes and hubby made a glaze, it looks more decedent in the picture!
