Yesterday we celebrated our oldest child's birthday by inviting his in-laws for lunch. We had 12 for lunch.
Almost simultaneously I discovered that my freezer had died and was in the process of defrosting/thawing... what to do? What to do?
Remembering the old maxim "When life gives you lemons- Make lemonade!" I quickly phoned a few couples to come eat up what we could from the freezer after church today, and started combining what was thawing into some creative dishes... The crockpot chicken (chicken, tomatoes, onions, oregano, and fajita seasoning) was a great success, and the shrimp/sausage gumbo (Okra, onions, celery, green pepper, roux) got good reviews though I think it still needs something to make it truly cajun.
The thing is : we had a wonderful time! There were 15 of us for this one ...
And for dessert, I tossed some leftover crumbled brownies with a couple broken sponge cake cupcakes with leftover thawed ice cream (triple chocolate)... I topped it with a dab of Cool Whip and called it "Emergency Trifle".
A good time was had by all...
