I decided to track my food for a few days to see how many calories I was getting, just out of curiosity. I ate 500 calories today and I feel stuffed! Seriously, I am so full. Here is my menu. Keep in mind, I only ate lunch and dinner today because I work the night shift. This means I sleep until 3 PM then wake up, eat lunch at 5, then eat dinner at work at 11 pm. I usually am just not hungry the rest of the night.
Lunch: 1 cup black beans mixed with sweet peppers and onion.
2 cups of lettuce, 1/2 tomato, 1/2 cucumber with ETL ranch cashew dressing.
Dinner: 1 cup black refried beans, 2 cups lettuce with 1/2 cucumber, ETL ranch dressing, 1tbsp of ground flaxseed. 1/2 cup grapes, few pieces of cantalope.
It is amazing that even though I ate 500 calories, I am full because I am getting the nutrients my body needs to feel full. That is the beauty of ETL.
On a side note, this week is my last week of night shift!!!! I am starting day shift on Sunday!! I am curious to see if I will lose weight now that I will not be eating at night. I can't wait!
