The week in review

I'm just going to go ahead and start with my 3 pound loss at my WLC on Wed. YAY!

While I hadn't made the BEST choices on Thurs and Fri, I seem to be back up a bit...but I am working hard this weekend. Today was awesome foodwise! I just logged my food and discovered I still needed to eat at least 100 calories and 10-12 g of protein. This was after I got to have my PB and celery.

This past week was pretty crazy, here is a recap:

Monday: I was planning to leave a bit early to offset some extra hours on Friday. I ended up helping with an on campus event. Then a co-worker reminded me I was reviewing with her students a bit at 6. I ended up being there a bit late. I got home and made grilled shrimp fajitas. Hubby got home a bit later than usual. He had eaten before going to his second job (he does two hours at a local pharmacy after working 8 at his hospital, just on Mondays) because he didn't know I was cooking. I did tell him, and it has been months since I haven't. Anyway, I made it, we both had some. It was pretty dang good! Leftovers were amazing. It was an America's Test Kitchen recipe.

Tuesday: I had to visit some of my interns at their facilities. I was gone from the office for 4 hours. I had to leave early because we had our home visit portion of our homestudy done (for adoption). So far, that has been the most painless part of our process. Bottom line, amount of "to do" list accomplished, almost nothing for two days now.

Wednesday: I started my day with another intern visit. I had class. I got a few things finished, ended up being at work a bit late, but still left in time to get to the nutrition club for WLC. Lost 3 pounds!!

Thursday: Still haven't gotten anything done! Where has the week gone?? I spent most of my day working on some homework. That means very little work stuff got done. My classmate and I stopped at got Chipotle before class. If I would have skipped the chips I would have been fine, but I got chips. I did skip the guac, so that was a good step. I also added veggies and didn't get sour cream. Oh, and WARNING...TMI ahead>I apparently missed either Mon or Tues dose of BCP. Usually when my month of pills is up, I still wait 3 or even 4 days to start TOM, however, one missed pill was enough to get things started today. And I still have a week of pills left. Ugh. Part of me wants to think this is my body starting to function normally, having lost some weight. The other part of me wants to think, stupid missed pill, I must be broken.

Friday: I had a 4 hour meeting, which put me at 45 hours for the week. I took an hour and half on Tuesday, so I'm at 43.5 hours for the week. And I got so little done... we got notice that there is another opportunity for us if we want to submit our profile. It was 3 when I found out. I still hadn't had the chance to add the newer pictures and update the text based on suggestions from the agency. So I got home about 4:30, worked really hard on getting it done. It was 6 by the time I finished. The last Fedex pickup is 6pm and it is a 20 minute drive to the OfficeMax, plus it wasn't printed and bound yet. Luckily, they don't need it until Tuesday. By this time, I was mentally exhausted and had no idea what to make for dinner. When hubby got home we went for Chinese. I made better choices than usual, but still it was Chinese. I had more veggies, and less of the fried stuff, but it was still Chinese.

Saturday: I got up and had my shake. I did 30 minutes on the elliptical and then set out on my day. I made a grocery list and then headed out. I went to OfficeMax. I thought about printing two profiles, but the guy wasn't all that helpful and didn't ask if I wanted more than one (he has helped me before), I got it shipped. We opened a FedEx account, and boy does that save some money! First overnight shipping is $60 with an account, $90 with out. We needed it to be there by 8am on Tuesday, so that was the route we had to go. No one has FedEx pickups on Saturday. :( Anyway, hubby got a text from a gal that he worked with while in school. She was inviting us to the Melting Pot, her treat. Normally, I'd think this was a good idea, but the two days of indulgence has left the scale higher than I want it. Also, this gal makes me a bit uncomfortable. She is quite fond of hubby. A lot of people are, but she makes me feel awkward about the situation. Anyway, the timing didn't work out, so I made dinner. It wasn't as good, but it worked. I baked fish. Low cal, high protein, and pretty tasty. I worked on knitting the blanket for some friends and I snacked on fruit. Good day!

Sunday: Not much has happened so far today, but we have some neighbors coming over for dinner. I am grilling fajitas. Of the things that I could make, and wanting to "celebrate" Cinco de Mayo, this was one of the healthiest things I could think of. Tacos would have been good, but would have cost more money and more calories, so I opted for fajitas. They will be great. I used the marinade recipe from Monday's shrimp and made chicken and beef along with the onions and peppers. I am also making a bean salad for the side. And wa-la! A yummy meal for neighbors. Before that happens, I have a wedding shower for a cousin. I also had hopped to get caught up on a few things for work. Yeah, I don't think those things, along with the elliptical will happen in the next hour and 33 minutes.

So, on that note, realizing how little time I have before the shower, and I still need to shower, I better get moving. Hope you all have had a lovely week. Thanks for reading.
