I am a stay at home mom of a VERY busy family! My husband works 4-5 days a week in the afternoon-evenings plus school one night a week. My son has therapy 3-4 times a week depending on the week. My son also goes over to his dads when his dad has a day off and because of his work schedule that can happen almost any day of the week. Luckily they live extremely close by so him going over there doesn't throw us all off too much. I also somehow manage my photography business which sadly has taken a backseat to all the things I have to manage for this family. We are busy all the time and our schedules are so hectic and rarely set in stone so I have learned to be flexible and get us all fed however I can whenever I can. Family meals rarely happen anymore and quite frankly it makes me sad.
While my husband was in the shower yesterday before work I walked in and shouted "We're doing a one week healthy eating challenge and you're going to take healthy meals with you to work." There was a silent pause and then he shouts back "uh okay whatever you say dear."
We've tried this before...we've failed every time. It's too easy to grab food while were out or microwave something rather than cooking a big meal. So I am going to go about it differently this time. We are going to have a meal plan for 21 meals. I will make sure they are all doable for the day we're doing it and make sure my husband has meals for work, keep in my calorie limits and keep within my sons dietary needs. *wipes sweat off brow*
The reason I am only starting with a week is because I want to start with something small. I want to say we got through one week and kept everyone healthy and happy and then go from there. We'll learn and make changes. After one week we are going to go for another keeping what we liked about it and getting rid of things that didn't work.
We are starting this on Monday as I need to meal plan and grocery shop still. I've come up with most of the recipes I want to use but I'd like to decide on a couple more and match them each up with the appropriate days. I can do this? right?
What are some of your favorite easy meals to make for your family? I would love some suggestions.
