I've been putting this off for a while now, but I've finally decided to splurge on some kitchen appliances. I'm calling this an investment in my health:
First, I've been wanting to try juicing... but my kitchen is far, far too small for a bulky juicer... or so I thought. I've finally found a mini juicer that is high-quality and small enough to fit in my tiny apartment kitchen!

Now I will be able to use up my extra vegetables in a delicious, anti-inflammatory micronutrient brew. Soooo happy! This will make such an easy, healthy breakfast when I'm short on time (perhaps paired with a couple hard-boiled eggs and a handful of berries).
Also, I've wanted to try the zucchini pasta thing. I love spaghetti squash (it's my go-to veggie pasta), but now that zucchini is nearly in season I thought it would be fun to mix things up... but, again, i didn't have room for one of those giant slicer/spiralers in my kitchen. So I found this:

I'm so glad I finally took the plunge with these new appliances.. can't wait til they get here!
Today's brunch: sweet potato, spinach, apple, sausage, and onion hash with an over-easy egg on top, and a bunch of blueberries and strawberries. Yum!
