This morning I worked in my little vegetable garden for a while, and then came in and did 45 min. of Wii Your Shape. Great workout!
Breakfast was coffee w/ Silk creamer and this fabulous wrap: a sprouted wheat wrap w/ veg-tofu scramble, 1/2 Tofurkey "sausage", 2 slices of tempeh bacon, avocado, kale, and a sprinkle of Daiya cheddar. This satiated me until 1:30!
This murky potion doesn't look all that appetizing, but it was delicious! A green smoothie made with cherries, banana, dates, cacao, and kale.
Later I had an apple--
Dinner was quinoa and lentils topped with roasted red peppers, lemon tofu with a bit of arugula pesto on the side, and some green beans.
And I made some lemon-poppy shortbread--reasonable healthy, made with barley and oat flour and sweetened with agave. And those are tiny pieces on a little condiment plate!
I started a new food journal today. Very auspicious, it being the first of May and all! This is the cover. Very inspiring!
