So...2 weeks. I've been doing this for 2 weeks. It doesn't actually feel that long, except I'm getting a little tired of eggs for breakfast...which is strange because I used to eat the exact same thing for breakfast every morning for months at a time (oatmeal in 2010/2011 and then granola & milk in early/mid 2012 and then cereal & milk in late 2012/early 2013) and I'm actually having more variety now. Maybe because it takes more work to prepare? or maybe it's because I don't love eggs... Don't get me wrong, they're delicious, occasionally, but it's definitely not the first thing I'd choose for breakfast. Every. Single. Day. I think after the Whole30 is over I'll be trying out some paleo granola recipes, although I may experiment with adding oats back in. I could easily see my breakfast becoming some sort of granola with almond or coconut milk along with a hardboiled egg (or a salmon cake!). Or a protein shake. I really miss the ease of protein shakes.
I'm going rock climbing with some co-workers after work today. It'll be a first for me, but I think it'll be fun. I am kinda scared of heights, but there's a harness...and a co-worker belaying me...wait, maybe I should be scared. I'm sure it'll be fine, although exhausting. And I have to be at work at 5 am tomorrow morning (I have to be on Eastern time). This will be followed by a Dr's appt. in the afternoon & then tomorrow night I get to see Neil deGrasse Tyson give a talk, woo! Hopefully I won't fall asleep during it. I am so looking forward to the weekend to just relax.
Breakfast: 3 egg & spinach omelette, coconut water
Lunch: Leftover veggies with curry sauce, 2 salmon cakes, fresh pineapple
Snack: nuts, hardboiled egg (pre-climbing snack)
Dinner: I have no clue. Maybe a salad? Whatever I feel like preparing when I get home from climbing...(I need to go to the grocery store for more eggs anyway, so this may devolve into me picking up some ceviche & roasted veggies from Whole Foods instead...)
