ETL Friendly Salsa

My husband and I have been on a Mexican food kick. A good friend gave me this recipe for salsa and it is AMAZING. We ate almost a whole jar in one day. I mixed it into my refried beans and used it as salad dressing.

Salsa

Ingredients:
1 28oz can whole peeled tomatoes (I used salt free).
2 jalopenos or pepper of choice
2 small cans of original Rotel
1 bunch of cilantro
1/2 yellow onion
2 cloves of garlic, minced
1 tsp salt (I omitted this)
1 tsp cumin
1 tsp sugar
1 tsp crushed red peppers (optional)
juice of one lime

Blend, tomatoes, onions, cilantro, garlic and jalopeno in blender or food processor for desired consistency. Add spices. Simmer on stove over medium low heat for 15 minutes. Take off stove.
Add juice of one lime and stir. Let cool.

Heidi's Note: After blending ingredients, you don't have to cook everything. I do that because my husband likes the onion to be soft. I also find it blends the flavors together. If you don't cook the salsa, skip that step and add spices and lime.

    Roasting the veggies is a great idea! I also realized after I made the salsa, that Rotel is not that ETL friendly because it does contain salt.

    I like roasting the veggies before I make salsa. They get a nice smoky carmalized taste.
