I Made Them !!! Homemade Pork and Beans !!! YUM

Good Morning All...
Well, yesterday, I posted a blog on how to make and can Pork and Beans...
I couldn't wait to try it so I made then yesterday...
They look so Yummmy...
The pictures in the original blog are of the girl that originally posted the recipe.
Here are my pictures...
I made mine a little juicier...

My 1" head space was measured from the top of the neck of the jar.
I probably could have gone a little fuller.

I had a problem with the 10 lb weight. It wouldn't jiggle. Tho it was at 10-15 lbs pressure.
It spit out bubbles so it was like releasing pressure slowly but holding the right amount of pressure on the guage.
I was so nervous I called a friend that taught me how to pressure can.
She was coming home from the library and going to be passing my home. She stopped over and checked everything out. She wasn't sure what was going on either.
I let the canning process finish and cool down...
The above pictures are the result of my stressful 75 minutes...
They all sealed and they look good. I just hope the beans softened enough.
Jenny, I thought of you about half way thru the process...I FORGOT to add jars of beans to fill the pressure cooker !!!! I made 8 jars of P&B's and my 21 qt holds 14 jars...
I made a note in my book so I don't forget again !!!!
Lesson Learned.
I'll let you all know how they taste when I open one.

Here are my adjustments...
1 tbl spoon of Molasses instead of 2 tbl.
1/2 cup maple syrup
used my homemade tomato sauce + 1 c ketchup
1 tsp garlic powder

It looks like the 1/2 cup of dried beans may not have been enough.
Next time, I'll use 3/4 of a cup.

Gosh, I feel like a Mad Scientist !!!!
It was fun and hopefully rewarding.

Now to get my pressure canner looked at !

Update ...
I just opened a jar and they are WONDERFUL !!!!!

    You are doing good you should be proud. I canned some but something was missing so when i open them i put 1 tablespoon of brown sugar and heated them up then thy were just right . If the beans didn't get done just cook them awhile when you open them ! Thanks for your support on my blog . I have been having a hard time with my eyes i was just okayed for a 700 dollar shot weekly to see if they can stop me from losing all my eyesight I will be canning tho dh is going to look over everything before we put it in the jars . I am on 8 chemo pills aweek and don't know if the food will spoil or not but i am going to do 1 packer of each and give it a week to spoil that's the only way i will know ! Love to have you on the team GOD ANSWERS PRAYER if you are interested . I love your team and trying to get back huddling on it again ! emoticon emoticon
