I roasted some vegetables...

I finally tried it last night.
I got some veggies specifically for roasting.
Beets, fennel, purple sweet potato & red bell pepper.
Looked amazing.



I kept hearing how beets tastes so much better when roasted, and fennel, too. (I love raw fennel!)

Well, let's just say it didn't turn out as well as I'd hoped.
The beets were yummy, but nothing to write home about. The sweet potato was good, as expected. I over-cooked the red pepper, even though I took them out early. And the fennel? Well the flavor mellowed, but I liked it much better raw.

So what did I do wrong? I baked them at 375, with just a tiny bit of olive oil. I don't usually season veggies, so I didn't add anything. Maybe it was the veggies I chose?

    Why not try it in a stir fry and see what happens. When I stir fry peppers, I put in mushrooms, onion, and franks cut up. I don't think I would like fennel roasted or stir fried. It taste better the way it is. Zuccini takes a little time to do, but potatoes take longer, and so does winter squash.
What I do is cook the longest first then in a separate aluminum pan I cook the ones that take less time, then I mix them together.

    These were actually better the next day!
I had the beets and sweet potatoes for a late lunch.

  I love roasted vegetables and tend to do whatever I have in the house. Carrots, brussel sprouts, mushrooms, broccoli, potatoes, etc. I'm not a fan of fennel or beets so I've never tried those. When I roast I put a little olive oil, salt and pepper on the vegetables and roast them, starting with those that take the longest. So the carrots always go in first, while those start roasting, I cut up whatever is next. It makes for a nice process and the vegetables that need the least amount of time go in last. It sounds like you did everything right, maybe you just don't like the flavors as much?

    I have a recipe I cook during the fall (Thanksgiving)
I'll look it up for you. I think it has onions and zucchini, etc.

How about trying some spices or Mrs Dash?
