I don't remember where I found this recipe but it is so yummy and quick!
Making it healthier by using almond milk instead of dairy milk and using a stevia sugar blend instead of all sugar. I do add real butter but you could use margarine to make it dairy free.
Whisk 2 Tbsp cornstarch with 1/3 sugar or 2TBsp plus 2tsp stevia sugar blend, add 2 cups of milk/almond milk and 2 egg yolks. Microwave 5 minutes
Microwave 2 more minute
Now stir in 1tsp vanilla extract and 2 TBsp butter
You now have warm vanilla pudding in less than 8 minutes!
Stir in 1/3 cup semi sweet chip and you have warm chocolate pudding!
I'm not one to cook much in the microwave but I think this is like magic! Hubby loves warm pudding, he just got it out of the fridge and its still hot:-)
I've never reduced the egg yolk or butter to lighten this more. I'm pretty happy with the lower sugar, fat and dairy!
