I was very proud of my lunches this week. A vast majority of items came from an Amish market (which honestly is a regular little market). The big difference is they have cheaper dried fruits and nuts, a lot of gluten free basic items (oatmeal!) and a deli counter (which is run by these sweet Amish ladies). It has been very good for my pantry.
I spent way too much time eating at my desk this week but at least I did it healthily. Now that its warming up again I see picnic lunches in my future.
I worked on Sunday (bummer) and we had crashed at my inlaws so I had to get creative. A girlfriend had given us a bunch of asparagus and I had my haul from the market still (mostly pantry stuff). So I came up with roast beef roll ups (cream cheese, red pepper & roast beef). Holy cow is it good. Plus some asparagus and a trail mix of sorts (dried apricots, dried kiwi, toffee almonds). I still don't know how I feel about the dried kiwi.
Pretty similar to 2 days previous. Doesn't look as pretty though. I added sliced avocado into my roll ups. Still soooo good. My fall back trail mix is as follows: cashews, raw almonds, sunflower seeds, dried cranberries, raisins and dark chocolate chips. I make a big batch and always keep it handy. I save my trail mixes for snack time later.
This one I'm particularly proud of. I found a recipe for quac with asparagus. But the grocery store didn't have cilantro and I had minimal avocado. So I took half an avocado, some green pepper, couple asparagus spears, 1 clove of garlic and some lemon juice and got this yummy green dip. I made a mini tuna salad (tuna, greek yogurt, honey mustard dressing, carrots & red pepper) too. I used the tail ends of our tortilla chips (not something I eat regularly anymore but it was one serving so it won't kill me). I got pitted dates and toffee almonds as my afternoon snack.
Another lunchable kind of day. The dip with cheese and roast beef on almond rice crackers was a really good mix. I have been on a baby carrot kick (not a bad thing). I made some gluten free chocolate chip cookies the other night - my boyfriend even likes them. That is impressive since he feels like our house has been taken over by gluten free foods he's afraid to eat. I also added my afternoon snack (the dates and almonds are a really good mix especially post work out like today)!
Looking forward to the weekend (it even started early for me today) that won't include having to make a lunch for myself to take into the office because I don't have to go in!
