For years, fat has gotten a really bad rap. Millions of people have cut out of their diet things like nuts, olives, oils, even avocados, in an effort to lose weight and improve their health. Unfortunately, it hasn't quite worked out. Most have replaced fat with things like sugar, salt and carbs, and this has proven to be quite dangerous. Statistics show that low fat diets haven't made Americans thinner or healthier. Quite the contrary. Sicilians, on the other hand, have known for centuries that fat is NOT the enemy...
