Rice or no rice?

Tuesday, April 23, 2013

So I have been doing low carb for over a week now. Tonight my husband wants fijitas for dinner with shrimp, beef and chicken. We ae not going to put them in wraps we are just going to eat the meat, onions and peppers. But what to cook with it. My kids really like rice so I am trying to decide whether to fix it. I know if I fix rice I will want some and even with eating a 1/2 cup of rice I am only at 20% carbs for the day. So the question is should I or shouldn't I. I don't think I should because I pride myself in no carbs during the week so I guess I will have to find some other side to go with all of the meat. ha ha! Whenever I think of fajitas I think of rice and beans as side dishes. I don't want to put the meat on a salad because I eat a salad every day for lunch and I don't want to get burnt out on them. What to do? UGHH! Not sure. I will be eating enough fruits and veggies today without having one for dinner. I have two fruits for snack today, I also had a fruit for breakfast and I am having a salad for lunch. So I guess I can just eat the meat for dinner.

Yesterday I had a great day! I ate on the low end of my calorie range and never got hungry all day long. I have been eating every 2 or so hours. Normally a piece of fruit, cheese, low carb yogurt or an atkins bar. So far so good. I really want out of the 190's by Friday. So definately NO RICE!

Awesome work on sticking to it! Here are a couple of things I serve with our wrapless fajitas; I should include a caveat that some people do not consume soy for health reasons. I personally think soy is fine when only done a couple of times a month, so I don't limit myself on having it, but your mileage may vary. :)

- Guacamole (mash an avocado, add lemon juice, chili powder, mayo, and garlic salt/powder to taste). There are only 5g per half-avocado, so I figure 1 avocado makes 2 servings at 5g each.

- Black soy beans (you can find these if you do a search on Amazon; they're by Eden and only have 1g carb/serving (3g per can) and they are AWESOME for so many things - I use in chili, etc. too... perfect sub for regular black beans). Here's full nutrition info: in a half cup serving they have 120 calories, 6 g of fat, 8 g of carbs, 7 g of fiber, (1g net carbs) and 11 g of protein.

- TVP with chicken broth and spices will make a pretty decent substitute for rice. Mix it I think 1:1 with broth and then season. It is fluffy like rice and has a similar texture. I believe it's only 3g per 1/4 c. It's best if you use it as a bed for your wrapless meats/veggies, so that it soaks up some of their juices.

Hope that helps!

how about quinoa? High protein, high fiber, similar in texture to rice. Great job on the low carb, it's not easy.
