My son and I tried this new recipe: Sweetcorn and Coriander Pancakes

The recipe says it serves 4/6.... 4/6 what? Small armies?!
The amount of batter was crazy and it took me ages to cook them all. However, they are yummy and they freeze well, so we have a stash in the freezer for future quick lunches. They are delicious with a green salad.

Finally, we've had some good weather here in Northern England. Even Candy the cat has been sunbathing:

We had a "girls night-in" at mine on Friday evening. I served nuts, crudités, bite-sized veggie burgers, potato and feta croquettes with home-made dips: hummus, mayo and sweet chilli sauce.
It is the 1st time I have ever made sweet chilli sauce and.... It almost killed anyone who tried it!! It is SO spicy! It is blow-your-head-off spicy; it should come with its own warning label as it is quite capable of doing someone serious physical damage!

And finally, Spring has finally sprung!! So I bring you pretty flowers from my allotment!

    We made a triple batch of whole wheat pancakes Sunday but we were feeding our two boys (ages 14 & 11) plus two more 11 year old boys. I don't think there were any left. It's always nice to be able to freeze pancakes and waffles.
