Springing to Action Challenge - Week Nine

Oh my gosh I've had a bad week. I'm going to get the bad news out of the way and then move on to the more positive stuff.
I have gained another three pounds. The reason? The usual suspect: emotional eating. I've also strayed way off course and haven't been following any kind of a food plan. I think it may be time for me to get back on Weight Watchers again. I'll give the Spark meal planner one more week but it just doesn't seem to suit my needs. I am putting some diet disaster recovery measures into place today! I'm clearing out the junk and going shopping for more fresh stuff.
Now, onto the good news. I did really well with the superfoods challenge. This week I ate asparagus, lettuce (which I eat every week anyway), spinach and peas. The recipe that I would like to share is for low fat vegan creamed spinach. Here is the link: www.veggie-quest.com/201
I used fresh spinach to make the recipe and I didn't use the optional almond butter. I did however, add salt. The end result was not bad but it was definitely missing something. Next time I will try adding a finely chopped shallot sauteed in just a tiny bit of oil.
We had more snow this week (will it ever end??) but I did get out for a run. It felt fantastic and I'm looking forward to jumping back in to the C25K program to see how many k I can run this summer!
