Recently, my husband was diagnosed with Squamous Cell Carcinoma of the Tonsil. He had his tonsils removed along with a few lymph nodes that also contained the cancer. He starts radiation treatment next week. I had posted a picture on my facebook with him being fitted for his radiation treatment and he looked dead. I didn't like it one bit! Comments were made, of course, and one in particular caught his attention. It was from my grandson's stepmom and she said that we needed to watch Fork over Knife, a documentary. Well, last night we started to watch it. We made the decision to go Vegan, for the most part, and eat healthier. Maybe some of the health issues we have just may reverse themselves. I have stomach issues and they get triggered by certain foods. This diet cuts out those foods that make me sick. It's not really a diet at all, it's more or less eating the way we should. Cutting out meat will be a tough one for both of us as we love our meat, but we can do this. Maybe we can have one day a week where we eat one type of meat, albeit a small portion of it, just so we can have the taste. Honestly, it won't be so dificult for me to do as I don't really eat a lot of meat anyway. For my husband, it will be hard as he is a "meat and taters" kind of guy.
My downfall will be to give up yogurt. I love Greek Yogurt and I will have a hard time saying goodbye to it. Goodbye yogurt, hello beans! lol Anyway, I am not sure how often I will blog my progress, but I will try to do an entry once a week. TTFN
