I don't know about you, but this week just flew by me. I can't believe it's already Friday night. First off, major kudos to law enforcement folks in Boston and first responders in West Texas. God bless. I was glued to the tv footage and my twitter feed (@GrapefruitRules) for the last several hours, but after reading some of my friends' posts on facebook, I need to pull back. I'm disturbed by some of my friends' comments about waterboarding or otherwise hurting this 19 year old boy. I understand that emotions are raw, and that he is suspected of having done a terrible, awful, unfathomable thing, but he's still a human being. I'm just stunned. There's a whole lot of information we don't know yet. But I don't want to turn this into a political blog or get a whole lot of backlash from people. I'm just pulling back myself from the facebook fray and going to focus on the positives of this week in my more immediate world while sending positive thoughts to those in less fortunate circumstances.
Once again, I had a successful day foodwise. I am finishing up right at 1760 calories and definitely feel good about that. I could eat more, but I'm not going to. As for the water, I still struggled with it today. But I'm going to fill up my liter bottle and will probably finish up with 10 glasses by the end after I finish my workout.
Any of you out there that are single and still shop at Costco? I ended up buying a bag of avocados there last weekend to use on the fish tacos I've been eating all week. But when I first bought them they were far from ripe, so I used the rest of a jar of Mission brand guacamole I had left in the fridge instead of the homemade avocado creme from the Hungry Girl recipe. Now, here I am at the end of the week with 6 very ripe avocados. So, I decided to follow the instructions from the Haas folks in California and make avocado puree to freeze. What you do is blend up the avocados with 1 Tbs of lime or lemon juice per avocado. I ended up with a little over 3 cups altogether. So, I measured out 1 cup portions and put them in separate containers. Two of them in the freezer, and one in the fridge. I'm curious as to how long it will last in the fridge. And how much of it can I possibly eat before it goes bad? My plan for tomorrow is to add a spoonful to my new favorite breakfast burrito, which consists of southwestern egg beaters, a little mild cheddar cheese, and a whole wheat flatout wrap. I think the avocado will make it a little more interesting tomorrow morning. Then for lunch, I have some frozen buffalo burgers, so how about a burger with a little cheese, avocado, and tomato along with some baby carrots and baby cucumber slices. Sounds pretty good. I have plans with a girlfriend tomorrow night, so I don't really think there's much of a way for me to eat any more of the avocado puree tomorrow.
OK, now for the exercise portion of this blog. I haven't done it yet, but I'm going to change clothes as soon as I finish writing and do as much of the Leslie Sansone 4 mile video as I can tonight. It's 8:45 p.m. and I'm pretty tired, but it's Friday and I can make it a while longer. I have a book I need to finish because it has to be returned to the library tomorrow and maybe a long workout will be enough to get me wired to crank through the 2nd half of it. Darn new releases! The library won't let me renew it. Oh well. I can do it! Lee Child's "The Affair" by the way... the latest Jack Reacher story. They're usually pretty entertaining reads and this one is good so far.
