Weigh In & Weekend Food Prep

Weigh-in this week was good... down 3.2 pounds!! Considering my lack of exercise these past few days, I'm happy (I hurt my foot a few days ago...rain + leather shoes = no more skin on my pinky toes, ouch). Luckily, they are feeling better today and I am able to get back to my walking routine this weekend. I normally take Sunday off, but this week I'll be making up for lost time.

Food prep for the week:
-1 Dozen Hard-Boiled Eggs
-Cut up Veggies for Dipping (in Babaganoush)
-Cabbage Rolls

-Grain-Free Chicken Nuggets

-Sauteed Zucchini and Bell Pepper
-Kale Chips

-Sweet Potato Brownies

Meal Plan for the Week Includes
-Whole Roast Chicken w/ Leeks and Carrots, Dijon-Bacon-Braised Brussels Sprouts

-Chicken Soup w/ Homemade Bone Broth

-Beef and Green Bean Casserole

-Grilled Lamb & Veggie Kabobs

    Looks good! Those cabbage rolls, casserole and brownies (duh) are totally calling to me!

    Cool beans! I love it when people take the time to cook. I am a classically trained chef and have been a chef instructor for 3 years at a local technical college. The greater variety of foods and flavors you can cook; the better! Keep up the wonderful inspiration!!

I miss eggplant dip. I'm intolerant to eggplant, a slight allergy that makes my nose go numb when I eat it!
