Meal Plan for 4/20/13 through 4/26/13
Well, Jon is heading back out on the road again on Sunday, for a 6 week contract on the east coast. He’ll still get to come home on weekends, but that basically means I’m back to cooking for one. I’m looking forward to getting the whole bed to myself again! Haha. I am not cooking tonight or Saturday night. We are doing a 5k. Now, those of you who “know” me know that I do NOT exercise. So I will be walking the 5k. It came about because we were trying to find something fun to do tomorrow night since J’s birthday is on Monday. Most of his friends were already signed up for this “Rave Run” 5k, so we jumped in. It should be fun though, it’s at night and in City Park downtown, and it’s a “rave” theme so lots of lights and music and stuff. Turns out too, in talking to his friends, it sounds like most of us will be walking haha! Apparently hockey players don’t run. J flies out mid-day on Sunday. So, here’s the plan!
SATURDAY – No meals planned for this day. The 5k is at 8pm so I’m guessing we’ll just snack before, and all go out to eat afterwards.
LUNCH: Not sure yet. I’ll probably just pick through the leftovers or have a grilled cheese with soup.
DINNER: I might be going to a hockey game, but I’m hoping I can just stay home. I’m all hockeyed out. If I stay home, I’ll just grill something for myself, either a steak or one of the hamburgers that I grind myself, along with some kind of veggie and sweet potato fries.
LUNCH: Chipotle! Unless I have some kind of leftovers hanging around still, then I’ll eat those.

I’m loosely basing my dinner on this recipe. I’m not a shrimp fan, nor am I a cooked spinach fan haha. But, I will be using pre-cooked chicken breast and broccoli in it, and using a store-bought Arrabiata sauce that I have in the pantry. Arrabiata is spicy, and J doesn’t like anything too spicy, so I’m going to revel in it while he’s gone! I’ve made this before, last summer, and I keep forgetting about it. I love using greek yogurt in the place of cream to make a cream sauce. I also plan on using Barilla Plus Penne. I’m only going to make 4 servings instead of 6, with 16oz of chicken breast but leaving the sauce the same. Total calories for each serving is 463, and it also has 43 grams of protein! Also, since I’m making 4 servings, I’ll have 3 meals worth of leftovers for lunches.

So, this is an experimental meal, but, I love polenta, and I love sausage & peppers, so when I saw this recipe I was like, what a great combination! I am going to cut this recipe in half and have the second half Wednesday night, so it’ll be an experiment to see how well the polenta will reheat. I’ll cook the sausage and peppers fresh on Wednesday night. I buy my chicken sausages at Sprouts Farmers Market, and I really like their spicy version. Right now, I have the calories for this at 577, but I might have overestimated on the sausage weights.

DINNER: Chicken Broccoli and Rice Casserole. OK so J’s birthday is on Monday, but since he won’t be home, we’ll celebrate it on Thursday night. I do not have a link to this recipe, and it’s not all that healthy, it’s J’s mom’s recipe and he said it’s one of his favorite things ever. Since it’s his birthday, I am not making any attempts to make this healthy, and am even using canned cream of mushroom soup, just like the recipe calls for. Actually, the calories are not that high, around 600, but the sodium is out of this world, as is the fat content. Thankfully, he does not like sweets so I will not be tempted with birthday cake! Maybe I’ll put some candles in the casserole, haha!
