A few days off

Wednesday, April 17, 2013

As of five o'clock this evening, I am off work until Tuesday morning. Huge sigh of relief! I don't think it's entirely from work, but I've felt stressed and tearful for days. I just need a serious break.

Besides the small matter of the car registration, I'm planning to slowly go about getting some stuff done around my apartment, like bundling up some more stuff for the Salvation Army. Some of my dresses are so old they still have shoulder pads! That should tell you how far out of style they are.

Today my copy of The Complete Irish Pub Cookbook arrived. Quite a few goodies I'm looking forward to making from that. Alex Guarnaschelli's cookbook is next. She's my favorite judge on Chopped, my favorite TV show.

The tax refund will be here in a few weeks. The plans are a new bed, new knives and a new set of dishes. Pfalzgraff has the set I always wanted for way less than half price! As for the knives, I'm working with a three year old set of K-Mart knives and they're pretty well ready to donate. I want some really good kitchen knives.

Time to fix some dinner and chill for the evening.

I never knew what a difference a good set of knives could make until I got them! You are going to love them the way you are always cooking.

Mind if I give a little knife advice? Do not buy a "set." They are expensive, and you will probably end up using only two or three of the knives from it.

Instead, buy one paring knife and one chef's knife, and spend the dosh to get really, really good brand like Wusthof. I adore my Wusthof knives like they were my children. Go to someplace like Williams-Sonoma on a weekday with a cutting knife and a bag of produce and ask to test the knives. There are different handle styles and you can feel what feels right in your hand.

I have always used a French knife, but for Christmas this year I was given a 10" santuko knife, and I absolutely adore it. I highly recommend trying one out.

The only other knife you might need is a bread knife, of which I confess to having three. (One of them is a very cheap knife that I keep around for when I take bread to someone else's house and don't want to risk forgetting my good knife.) But I bake a lot of bread,

And a knife block is unnecessary. Knife guards work quite well.

    Hope this is useful!
