This week I tried out this Chicken with Beer and Honey Sauce www.sohowsittaste.com/20
It originally came from a Cooking Light magazine. I picked this because I had almost all of the ingredients on hand.
This was super delicious, and so easy to put together. You do not taste the beer at all, it just adds a little "something" to the sauce. I halved the recipe to make 2 servings, but I wish I had left the sauce ingredients for 4. I did use extra shallots because I love them. I served my chicken on a bed of rice so it would have been nice to have more sauce for the rice. I also served with some glazed carrots. My piece of chicken was 4.5 ounces after cooking, so that plus the sauce was 210 calories. My glazed carrots was 104 calories, and 3/4 cup of white rice was 154 calories (I could have just done a 1/2 cup). So, it turned out to be a nice well rounded meal for only 468 calories.
