Lunchtime is always a problem, I am good at sorting out dinners but lunches!! well they have never been my strong point.
I like soups and salads DH does not. Sandwiches can end up boring and even I can not always make the interesting. So I needed some inspiration and hunted around in the Recipe section and found some lunches that we will both like.

So now I can experiment and play around with these and get lunchtime back on track.
Those that we like the most will be added to my recipe cards so I can plan my meals and buy in what I need for the week.

I have decided that I will not ask what DH wants for lunch but simply make it and hand it to him much easier and he gets a surprise as well.

Great that you are looking at lunches like this. I too find lunches hard to figure out so quite often buy a lot of seasonal veg and make a kind of ragu out of them. One way of getting the vegs in and not too high on the calorie scale either (unless I add a few potatoes emoticon ).

Love the new background pic as well.

As dh and I are in our 50's I'm thinking more and more about what I'm going to do about meals when he retires. He works away from home and is home a couple days a week most weeks. He likes to eat one way and it's not all that healthy. I dread the day he retires as he is very picky and was raised to eat many of the same foods frequently. I like your idea of fixing food and just handing it to him. Good for you.

emoticon Yes, my DH is a meat and potatoes person and I'm the salad/veggie one. How we solved the problem in our retirement is to have our dinner meal between 2 and 4PM and then a supper that would have been lunch (each having different things) I get my salad and he has popcorn, nuts,a sandwich, a cup of soup or even cereal. This has worked for us. Glad you have found some good SP recipes. Do hope they proved helpful. emoticon
