Flank steak is a staple here in Mexico and I thought I try it with a different twist.
I sauteed onions, mushrooms, garlic, spinach and italian spices.
Spread it over the flank steaks, added some grated manchego cheese and rolled them up. Browned in a skillet and then 20 min in a 350F oven
Served with roasted vegetables and wild rice
The good news is that I have lost the little I put on with my trip and I am below goal weight! This morning I did the first yoga session since we went on our trip - it feels good to be back with the program again!
