Meal Plan for April 13-April 19

Well, I had a few changes to last week’s plan. J took a puck to his jaw at his hockey game on Wednesday night, so I ended up not making the flank steak and hash dish since steak was too hard for him to chew. He’s OK, nothing’s broken, just very sore. So instead, I made the meatballs from this recipe: www.thekitchn.com/recipe

. I served these w/ jarred marinara and spaghetti. Each serving was 2 meatballs and 316 calories. Next time I would use shredded mozzarella instead of string cheese. The string cheese didn’t melt too well. Also, tonight we’re having ground beef enchiladas. Not the healthiest things on the planet but they’re soft and J loves them, and well, so do I!

Now, onto this week! Saturday we have a hockey game and I hope to go try out a gourmet hot dog place afterwards. I love me some hotdogs, and I want to try the elk jalapeno cheddar dog.

SUNDAY:
LUNCH: I’ll be out and about shopping with a friend, so we’ll probably eat out somewhere.

You know me and one pot meals, love them! I have a pound of spicy Italian chicken sausage to use, and broccoli is on sale this week. To up the protein amount, I am going to use Barilla Plus Farfalle, since it has more protein per serving than regular pasta. I was also surprised to see that despite the use of the heavy cream, this meal is only 542 calories per serving, for 6 servings. It should also be good for lunches too.

MONDAY:

DINNER: We are going to a Rockies Baseball game.

TUESDAY:

. I am going to cut both of these recipes in half. The chicken sounds really delicious and easy to put together. A 6.5oz serving of chicken is 279 calories and a serving of carrots is 104 calories. I’ll probably serve some rice with this too since I’m hoping there will be some yummy sauce!

WEDNESDAY
LUNCH: Leftover Pasta

DINNER: I’ll probably have something out of the freezer, maybe the chicken meatballs I made this current week.

THURSDAY:
LUNCH: You guessed it… leftover pasta!

DINNER: I am going to try out the Flank Steak and Squash Hash from my new cookbook that I was supposed to make this past week. Hopefully J’s jaw will be feeling better by then!

FRIDAY:
LUNCH: Chipotle!
DINNER: Not sure yet.

    Amanda, that's the main reason I picked it... only thing I need to buy is the shallot!

CLR that's hilarious... I guess honey and bear do go together though!

    For some reason, I kept reading the chicken with honey beer sauce as chicken with honey BEAR sauce. I was intrigued enough to check the website and still read it as honey BEAR. It wasn't until I saw the ingredients that I realized it says beer emoticon . Anyways, I'll definitely be making the recipe soon!
