Paleo Day 8/30

An overall successful and not too hungry day.

Ran 2.5 miles in the morning with Rambler (my dog) and a friend and her dog.

Breakfast was local sausage from the market, 2 eggs, and mandarin oranges.

Lunch ended up being more of a late morning snack because I was hungry and I needed to take my calcium supplement with food. So, I had the last slice (maybe two slices?) of my paleo pizza from Friday. Decent, and filling.

Drank lots of water, had some walnuts. Also some frozen cherries as a snack.

After work Rambler and I tried to go for a 4 mile run but it was very warm and humid, and he's still adjusting to the heat again. I was concerned for his safety so we ran 2 fairly fast and walked the other 2. I'm glad I took it easy on him 'cause he took a while to recover after we got home.

Dinner was a smashing hit. I often use my runs or walks as a chance to brainstorm what to make for dinner, especially on nights when Bryan closes at work and I am on my own. I love to experiment!

I made honey sesame chicken with a serrano balsamic reduction sauce, served in Boston lettuce leaves (from the farmer's market!) with sliced tomatoes and chopped avocado. OMG so good and satisfying. Sweet, spicy, crunchy, creamy, fresh, juicy - it hit all the right palate pleasing spots! I was also so hungry post-workout that I finished off the little bag of raw carrot cookies I'd bought over the weekend while I waited on dinner to be ready.

I really need to get more of those! :)

    I second the recipe request! I've crashed off the GF diet and have been paying for it ever since. Your dinner sounds delicious!
