UPDATE: April 2013 It has been a month and 10 days since going Vegan. I can't believe it was that easy of a transition. Liking to cook probably helps in this journey. The adventure in the kitchen is taking me to new and different foods I thought I would never touch. But my goodness, I am so enjoying the eating, the feeling of being full, and off the roller coaster ride of all the sugar I had been ingesting for so long. It seems to me, this is how a body is suppose to feel.
From making Candle Cafe's Brown Rice and Lentil Burgers to Eggplant and Frozen Tofu in a Casserole, (not sure why they didn't just call it Lasagna because that is what it tastes like), I am not missing meat in the least. I am so happy that I have so many cookbooks on hand and the internet to surf for such delectable foods.
Another exciting thing is that my best friend also has gone mostly Vegan at this time. We have each other for support. We have each other to refer Hulu and YouTube videos of keeping us on this path. I look forward to getting up in the morning and seeing what the new day will bring.
With gardening season coming, the planning is starting and I already bought my organic and heirloom seeds. There is going to be such a variety of foods that I would never have attempted to grow, much less even try to eat. But I am willing to learn how to both grow and prepare the vegetation from my own back yard.
Oh ya, and by the way. Without counting calories and eating this way I have dropped 9 1/2 lbs. so far. Now that I can live with also.
