Whole Grains

I've been working hard to get in the 6 servings of whole grains the dietitan reccomended the other day. As I mentioned, I've never really focused on whole grains...just whatever I grabbed or was around.

She reccomended checking out www.wholegrainscouncil.o
for ideas about what is a whole grain, how to prepare it, etc. It's actually a good website and when I went to the store last night to find some new whole grains, I saw their logo on many of the products showing how much whole grain was in each serving. It's a great resources.

So, I've made a couple of things so far:

Zucchini Pineapple Muffins (they don't look great but they taste awesome)

Wild rice shrimp salad (with pineapple, zucchini, mushrooms and onions.)

Tonight I'm going to make:

Ham and cheese quiona cakes. They have zucchini, egg, cheese, green onion and a couple of other things in them. 42 calories per cake!

I'm excited to try new stuff but it's hard to know how to prepare things and some of the grains I don't even know what to do with. For instance bulgar. What is that?! Anyway, I'll figure it out.

I have a one on one appointment with the dietition on the 30th and she wants me to come with a few meal ideas for breakfast, lunch, dinner and snacks. They we can talk about those and how to meet the guidelines. I'm excited about it.

    Wow! Good for you that you're continuing your investigation. You're going to discover a lot of new things and find some new favorites. I'm so excited for you!

I would love for you to share all three of the recipes you're talking about when you get a chance. I'll just make the muffins gluten-free and enjoy. And I bet that the Wild Rice salad would also taste just as good if made with quinoa and it would have way more protein to boot!

I love to collect recipes and cook from them.

One of the first rewards I gave myself when on SparkPeople was a shiny new digital kitchen scale which I absolutely adore and could not imagine my life without. (I already had one but it wasn't a reward...)

I definitely would not have my success if not for it because I measure all my nutrition on it! You should have seen my husband's face when he measured cooked pasta with a measuring cup and then I weighed it to show him the difference. Now he's very careful to make sure the "magic scale" is used if he's serving me something!
