Veggie Blast

We decided to have a real vegetable celebration emoticon after a breakfast of eggs, toast and a tangerine.
I discovered that we still have some carrots emoticon from last year's garden (carefully hidden away in a cool spot). I had left the dirt on them, so except for a patch or two of "old", which I scraped-cut away, they were fresh and crunchy. Together with parsnips they made a good treat. We also had sweet potatoes, a beet and some celery root (celeriac) with onions and garlic. For protein (and fat), I set out a dish of mixed nuts (almonds, pecans and sunflower seeds) that we sprinkled on each veggie as an experiment. So that was our "lunch".
Dinner is a big tossed salad: greens, cuke, pepper, celery, broccoli and some dried cranberries. Maybe I'll serve some cottage cheese or Feta, too. Our usual fruit and plain Greek yogurt can "round" out the protein.... maybe.
For me this is like having a 10 hour dessert !! I haven't counted the "sugar", so probably it is. emoticon
Happy Spring!! The three feet of snow in portions of our backyard won't deter me today!! emoticon

    Mmmmmmm...breakfast lunch and dinner sound yummy! DH & I are having a Wild Argentinian Red Shrimp & Strawberry Spinach Salad tonight. There will also be some red bell pepper, heirloom tomatoes, seedless baby cakes, green onion, a little avocado, and raw walnuts with a sprinkling of EVOO & Balsamic Vinaigrette (homemade). Sounds like we're eating similar meals this evening.
