Had another sausage and egg breakfast today, with a banana. Two mandarin oranges for a snack. (Had a discussion with the hubs on saturated fat and how is that OK? Found some articles to read later - interesting stuff.)
Lunch was great: a huge salad with fresh slaw (sliced a bunch yesterday to use for a while) sans the mayo, baby kale, baby spinach, sliced carrots, and half an avocado. I "fried" shrimp in coconut oil, sesame oil, lemon juice, and honey. I didn't use a batter but the shrimp still had great color and texture, though not exactly crispy. I used the oil/juice/honey mixture as the dressing over the salad and seasoned with pepper. Very good!!!
Will likely have an apple later for an afternoon snack. Maybe with some almond butter.
Dinner is a total unknown at this point. It will be the second dinner shared with the hubs who is not doing paleo. Not sure how to tackle this one. Two nights ago I made a delicious stuffed acorn squash with a ground turkey/tomato sauce/veggie filling. SO GOOD. However, we are out of squash.
Tomorrow should go OK. However, I have a scheduled "cheat day" for Sunday. We are going to a farm tour with goats and there are cheese samples at the end. I love this goat cheese (I buy it at the farmers market on a regular basis) and I REFUSE to not enjoy it on the tour. Other than that, should be a successful weekend.
