A big WOO HOO to you for doing so well with your new eating plan. So exciting to see all the changes. You inspired me. I personally like making a big stew where I can have a few different vegetables in it and a favorite protein. As long as you have a good stock with it, it's always delicious. I make enough for a few days.
I like what you said at the end of the vlog. That this is a lifestyle and not a temporary thing. I so agree. That is why it is so important to make meals you like and don't feel deprived and to find exercise you truly enjoy so you will look forward to doing it.

warmed tortilla filled with diced tomato, shredded lettuce, salsa, cheddar and sour cream with taco season browned burger.... better than take out every time
or taco salad- a big bowl shredded crisp lettuce w/ warmed chili [can] poured over top shredded cheddar & drop a spoon full sour cream served with salsa on the side [copied from Wendy's modified for real people]
