Adding More Veggies

So I am finishing up week #3 of the challenge and today is one of my off days from work. So I will make my dinner at home. So what is planned is tofu, couscous, and stir fry. I thought the stir fry would help with veggies.
Yesterday one of my snacks was pickles,
which I guess technically counted as a vegetable, right? Every day I work I have had a large salad
for dinner and I have been adding some sunflower seeds to help with satiety.
Some other accomplishments I have is that it has been 33 days since I have had coffee or soda!!
I have mastered being vegan on my days at work so it is 5 of the 7 days of the week. So now I am working on doing 6 of the 7 days.
It's a little late in the day but it's time for me to work out.
