On Saturday, my husband and I spent the afternoon visiting different farmer's markets and came home with some delicious spring food such as zucchini, jicama, strawberries, blueberries, and cilantro. We live in central Florida so these things are in season right now. I was reading through a food network magazine and saw a recipe for cilantro chicken. I thought, I could use those same spices and use them with white beans, so that is what I did. The white beans turned out amazing. I blended cilantro, pepper, soy sauce and a tiny bit of sesame oil and stirred that into white beans I had cooked in the crock pot. The beans had great flavor. I am going to look through all of my old food network magazines to find meat recipes I can convert to bean recipes. Love ETL!
