I am not going to say I was great on Easter because I did go over my calorie range by 200 calories but to me that is a great success compared to years past. For most holidays I am always elected to make deviled eggs (which I don't like). I make them and never eat them. This year I decided in memory of my Aunt who did on Thanksgiving I would make her famous Martha Washington Cake. My aunt is known for making these wonderful 4 layer cakes that are amazing but we have not had one in years because my Aunt had not been in good health and was in her 80's when she died. I do not like raisins at all and this wonderful cake has one cup or raisins in it and takes at least two hours to cook, make the filing and make the icing. It turned out beautiful but I did not eat it as I do not like raisins. So I think from now on I will just continue to make items I do not like and then I will eat much healthier. ha ha! I did eat the ham, rolls, green beans, collards, chicken pie, and slice of apple pie.
This week will be tough as I leave for vacation in a few days. I am going with some friends who are watching what they eat as well so I am hoping that will help me. We plan on being extremely active so hopefully I will burn off any moments of weakness I may have. I am a little worried because I am in a 5K training challenge that has to run 3 times a week and I will be gone 4 days. I normally run on the treadmill and will not have access to one on vacation. I have never really ran out in public or on the open roads so i will tell you I am a little scared. I may try to get a run in the morning before we leave so I can not get behind.
So far today I have been great. I had a hard boiled egg for breakfast along with some yogurt. Lunch is a lean cuisine and dinner is something with chicken. I have not decided yet what I am going to do with the chicken breast yet.
