recipe slightly adapted from Jean Pare's "Company's Coming Muffins"
1 1/4 c. flour--I usually use a mix of whole wheat and white
1 c. rolled oats
1/4 c. brown sugar--can reduce slightly
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
3/4 c. raisins or other dried fruit, or nuts
Sift into large bowl, mix lightly, form well in centre.
1 egg, beaten in small bowl until frothy. Then add:
2 Tbsp. molasses
1/4 c. oil
1 c. milk
1 tsp. vanilla
Add the wet ingredients to the dry. Stir only to moisten.
Fill silicone cups (or greased muffin cups) to 3/4 full.
Bake at 400 F for 20-25 minutes. Let stand 5 minutes. Serve warm. Delicious with fruit salad.
