Chipotle Black Beans with Turmeric Brown Rice

Earlier a chef friend of mine posted some food pictures that made me want to create something spicy and warm. A "treat" of things I don't normally allow myself during my challenge (rice, spicier spices, a slightly higher sodium content)....

Not a chef, I do not measure things when I cook for the most part, I just toss in a little of this and a little of that until it tastes right. That said, these are the ingredients that I tossed together for those of you who cook like I do....

Chipotle Black Beans (sauteed with onion, garlic, carrot, tomato, chipotle powder, cumin... fresh cilantro mixed in at the end)

Turmeric Brown Rice (cooked with veggie stock, turmeric, onion, garlic, celery)

I served the beans on top of the rice, tossed half an avocado (diced) and several grape tomatoes (halved), fresh parsley and green onions on top....

and ended up mixing it all up when I ate it because it was so YUM that way!

But I was thinking it would also be great as a baked dish, in a wrap, on a collard leaf with other things, any number of ways....

Yummy and satisfying! (both separately, and all mixed together)

    Sounds like my kinda' home cookin'! What time did you say dinna' is served?

If I end up driving my Toyota Dolphin (you can see a photo of it in my Photo Galley if you're curious) to SF Bay Area, we're really HAVE to intersect, grrl!

    This sounds gorgeous. I cook just the way you do . . . and am thinking: how about a touch of lime juice??

And as for that cardinal: he would rank me a "sensitive' soul at all, I'm pretty sure.

How. Long. Is. This. Gonna. Take. ?????
