Not much to say except... w00t. I am cooking every day and eating very healthily. I did go over my calories several times, but it was all healthy fats, not carbs. Apparently, that is a very important distinction for my body! I am still eating very low-carb dinners and it seems to be really helping the fat melt off. I made a delicious frittata last night (eggs, butter, olive oil, basil, italian seasoning, cheddar, balsamic vinegar, with sauteed mushrooms and steamed asparagus all cooked together in a giant omelet) BEST LOW-CARB DINNER EVER! I think I will be adding it to my weekly dinner list (to use up the extra veggies that I have on hand). I'm super proud of myself for sticking to Couch to 5k, too. Time to rest and recover before Monday's run.
