Finishing up Wk #2 of Challenge

So today I am finishing week #2 of the Eat Better Feel Fitter Challenge. I start week 3 now and here is an article that I thought might help some people:

It is common knowledge for a lot but I know that it helped me a few years ago and it continues to. This week I think to help with my veggie intake I will focus on making one of my snacks a veggie like cucumbers. Maybe I can find a vegan dip to help with protein in the snack, hmmm. I will also try to make the second snack maybe something around nuts. I also think on my two days I cook dinner at home I will try to make one of the meals based around beans. If anyone has any ideas on how to get more veggies into their day please share. I can easily eat 5-7 servings of fruits and veggies but I usually stall around 4 servings being veggies.
