So I ran across a Sparkpeople recipe, and my first reaction was, “You’ve got to be kidding me.”

But then, being an open-minded guy, I decided to give it a try. The recipe is BAKED GRAPEFRUIT. Did you see it on the Sparkrecipes.com site? This is it:

Ingredients
1 grapefruit
1 teaspoon honey
2 teaspoons shelled and finely chopped pistachios

Preheat oven to 325 degrees.
Slice the grapefruit in half.
If your grapefruits are tipping over, use a knife to remove a thin layer from the bottom, taking care not to expose the flesh.
Use a paring knife to separate the grapefruit segments (optional). Run the knife between the inner flesh and the white pith between the flesh and rind.
Place the grapefruit halves on a baking sheet and top with the honey and chopped pistachios.
Bake for 15 minutes. Serve immediately. Makes 2 servings, 1/2 grapefruit is one serving.

I didn’t think I was going to like it, but I was pleasantly surprised. It was very good. I substituted the honey for agave nectar, but I’m sure the honey would be fine too. Give it a try and let me know what you think.

    This is kind of late, but I did this with an orange, walnuts and a bit of other fruit came out delicious, I'm going to do this from time to time as I don't get enough fruit in my diet usually~

    I have not tried this, but I certainly will. Thanks. I try to limit my grapefruit intake as it really effects some of my medications if taken in quantity.

    Hi there,
I have tried more than once to like grapefuit, this recipe looks like a must try even for me. I grew up with them on the breakfast table as my parents liked them but not me, well now, 40 or so years later, I'm willing to try more things, I'll give it a go and let you know how I like it, thanks so much for posting it. emoticon

    This post brings back memories. Many, many years ago, while carrying my first child, my favorite snack was broiled pink grapefruit covered with catalina dressing. Thanks for posting!
