New dinner recipe

WOW! I have to tell you all about this if you don't already know. I made a loaded baked sweet potato tonight. It is my new favorite thing. I couldn't believe how easy it is to make, and how fantastic it tasted. I love sweet potatoes, you know, casserole with all that brown sugar and butter and pecans and then i love just sweet potatoes with all that butter and sugar baked in the oven. Well, this is completely different. It came from the Biggest Loser this season so you can find it on their website. But I tweaked it a bit.
1 sweet potato
Ground turkey meat seasoned with taco seasoning (i used el paso) to taste
a little salt i used about 1/4 t
salsa (mine was homemade...not store bought)
mild cheddar cheese
greek yogurt (i used chobani non fat plain)
What I did, was boiled it first (it doesn't take as long to cook in the oven that way) and then set it in the oven for about 15 minutes to have that crispy outside. While it cooked in the oven, put turkey meat in skillet added some taco seasoning mix and salt and browned. Once everything is done. Take your sweet potato cut in half add in turkey, cheese, salsa, and top with a dollop of greek yogurt and you are good to go.
This was the easiest meal I have ever made and it was super filling and super good. I think BL's recipe also calls for a green salsa...but I don't think I would like a green salsa sooo, I just tweaked this one. But, I hope you get a chance to try this and hope you like it as much as I did! Oh and the BL recipe says it's about 342 calories for theirs, so this one might be a little less...I haven't plugged it in the recipe calculator yet. Enjoy!
