If you haven't checked out the Budget Bytes blog, do it. She doesn't have calorie counts up on her recipes, but It is easy enough to track the components of the dishes. Also, there comes a time when you can look at a recipe and know that it is healthy. Her recipes are all healthy.
This was like a healthy grown up version of hamburger helper. I wouldn't really call it "creamy" though. It was easy and delicious. DH and I both loved it as is, no changes. However, even with the mild version of Rotel, the girls complained that it was spicy. Next time that I make it (and there will be a next time), I think I'll use Italian styled tomatoes instead.
Edited to Add - It was like hamburger helper in that the pasta cooked with the other ingredients in the skillet and was super convenient.
It looks delicious! And thank you for introducing us to another great recipe site! The idea of calculating the cost for each recipe and serving could be really useful for some people. 1664 days ago
Looks fabulous! I love the budgetbytes site too. You've gotta try her hummus--the jalapeño cilantro and roasted red pepper versions are too-die-for and better than anything you'll ever get at the supermarket. 1664 days ago
