It's a beautiful spring day here in Montana, and I am feeling motivated and ready to tackle the tasks ahead of me. I am a new member here on Sparkpeople, and looking forward to the inspiration that I will undoubtedly receive from everything available to me.
I made an amazing dinner last night, which was my own version of Malibu Chicken:
2 thin sliced, hand trimmed chicken breasts
1/3 cup honey mustard
1/3 cup Teriyaki sauce
1 sleeve Ritz Everything Crackers, crushed
2 slices provolone cheese, each cut in half
1-2 pieces Smoked Ham Lunch Meat, Deli style (thinly sliced)
Pineapple Rings, with juice
Mix the honey mustard and teriyaki sauce together in a container which will hold the chicken breasts for marinating. Place the chicken breasts in with the marinade, making sure that the marinade covers all of the chicken. Cover the dish, place in refrigerator and marinade for 4-5 hours minimum.
Preheat oven to 350 degrees.
Crush one sleeve of Ritz Everything crackers and put them on a plate. Press each piece of chicken into the crushed crackers, making sure crackers cover the chicken entirely.
Place chicken on a baking sheet lined with aluminum foil which has been sprayed with PAM.
Top each chicken breast with ½ slice of provolone cheese.
Top the cheese with a pineapple ring.
Top the pineapple with 1 or two slices of deli thin sliced smoked ham lunch meat
Top the ham with other half of provolone cheese slice.
Drizzle juice from pineapple over all. If you have any marinade left, you may wish to pour it over all as well.
Bake in oven for 30 minutes and serve immediately.
