Ham. I has one. It was an impulse buy--from a local place (Smoking Goose Meatery). It's pasture-raised, no preservatives, and nitrite/nitrate free. It was brined with spices and smoked with fruit wood and hickory. It looks to be full of deliciousness (and sodium, but I can plan around that).
Here is the problem: what to serve with it? Growing up, we always had scalloped potatoes... cheesy hash brown casserole.. cheesy broccoli rice casserole... and other casseroles consisting nearly exclusively of fast-burning carbs and saturated fat.
Well, I'm going to do things a little bit differently.
